Put the Lime in the Coconut: Coconut Lime Chewy Cookies

I wanted to make my favourite chocolate chip cookies for a friend's birthday but was all out of chocolate chips. I know. Zero chocolate chips + me = serious sad face. But I didn't get bummed for too long, because I found a cookie recipe that called for coconut and lime. How summery and delicious does that sound? Plus, I had recently watched a documentary about the life of Harry Nilsson and had that dang "She put the lime in the coconut and shake em both up" lyric in my head. That was the push I needed. Coconut lime cookies it is!





These cookies were pretty simple to put together though I think next time I make these, I'll be adding in more lime juice or a few drops of lime oil extract. I like a cookie with more of a citrus kick.

To make the toasted coconut, take regular unsweetened coconut and place it in a small skillet. I use a heavy one made from cast iron which doesn't allow the coconut to burn so quickly. Turn on the heat to medium-high and stir it around a bit until it becomes mostly golden brown and toasty. It will start smelling really, really good. Remove it from the pan so it doesn't burn and let it cool. Then, start the cookie recipe.
